Kandai Cakery was founded in early 2011 to produce Japanese-inspired vegan confections. Combining the peaceful Buddhist tradition of cruelty-free food - shojin ryori - with voluptuous contemporary vegan sweetcraft, Kandai quickly became known for matcha cupcakes, dorayaki, and old-fashioned anko.
“Kandai” is a Japanese word variously translated as generosity, kindness, broad-mindedness, an appreciation for varying perspectives. As owner of Kandai Cakery, I find my purpose in this translation: magnanimity — big-heartedness. Even though I’ll always be impatient for our shared vegan utopia – for the time when we beat our swords into plowshares and our spears into pruning hooks – I know that the best way to persuade others is through kindness. With Kandai Cakery, I make the compassionate choice easy.
Though Kandai began as a partnership with a local Japanese restaurant, I have expanded the concept to desserts in general. I’m still passionate about making anko from organic beans, but I also make traditional layer cakes, marshmallows, cookie sandwiches, miniature cupcakes, macarons, and the like.
