Thanks so much for the &quot;glaze&quot; compliment, too. The reason it&#039;s so shiny: I had to frost them when the cupcakes weren&#039;t totally cool (I know, I know!) in order to deliver them by the tail end of the event. The white/vanilla is simply home-made vanilla extract (beans + grey goose :)), powdered sugar, earth balance vegan margarine, and a little splash of soymilk. The chocolate ganache was made with fair trade chocolate chips, soymilk, and maple syrup. Easy peasey!
